Who could use some comfort food right about now?  I’d like to offer you my recipe for Green Chicken Enchiladas:

3 pounds of good chicken thighs

Corn tortillas

2 cups of Monteray jack cheese, grated

2 cups of sharp cheddar cheese, grated

1 pound of cooked, drained/squeezed spinach and chopped

1 cup sliced mushrooms (optional)

Green enchilada sauce

2 Tablespoons good high heat oil

1 large onion, small dice

6 cloves garlic, chopped

1 large can green chilis

2 cups tomatillos,chopped (if you can’t find tomatillos just use 2 can of green chilis)

2 fresh jalapenos or ¼ cup pickled jalalpenos (more if you like hot!)

2 bunches cilantro with stems

¼ cup fresh squeezed lime juice

1 6oz container sour cream

1 teaspoon cumin

Salt & pepper

1. Bring chicken thighs and enough water to cover them to a boil in a large saucepan

simmer for an hour or until falling apart

2. Cool and shred the chicken with two forks of your fingers

3.  Mix cheeses (reserving 1 cup for top of enchiladas), chicken, spinach and mushrooms. This will be  your filling

For the sauce

4. Heat oil in a saute pan until hot, add onions, garlic cook until soft and then add cumin, salt & pepper

5. Now add the onion, garlic mixture and the remaining ingredients to a food processor and mix for a few minutes and you will have a nice green sauce!

6. Cover the bottom of a baking pan with a layer of the sauce

7. Pour some the sauce onto a large plate and one by one toss the tortillas

8. Then fill with filling

9. Pour a bit more sauce of top

10. Top with reserved cheese

11. Bake for 30-40 minutes at 350 degrees

    Sounds good. Please clarify how many and what size tortillas should be purchased. How many people will it serve?
